This one was produced Primary for Cider is Redfleshed and Very Hardy for Northern Europe with good Tannins and Producers a red Juice that Ferments to 7.5 % This is a Bittersweet APPLE
Charlottes Redflesh has lovely pink flowers and a columnar habit (until the weight of the fruit drags the branches down). Charlotte has Bittersweet fruit with a relatively low acid levels and a nice dose of tannins--something that hard cider makers value for imparting depth (mouthfeel) to the cider.
It's nothing you'd want to eat for dessert. Other cider Apples are not reliably hardy in zones 3-4 .This works well down MINUS 25 Celsius So this a great source of tannin for Northerners Especially Denmark Sweden Finland and Scotland. Unlike the crabs they have been using tend to been very high in acid and have not allowed cider TO BE VERY CONTROLLABLE
Charlotte allows levels of acid and tannin to work independently....

This is an eating/cooking apple with Granny smith ACID, For Storing it Keeps on the tree till spring and the wildlife love and retaining its crunchy and juicy texture, with Excellent strong flavor, until well after the February when stored in the Shed . . They hang late, and should be picked when the first one or two start to fall - Where this Apple shines though is it cooking and juice abilty The Juice is red and the Apple Pie is red. WOW
Red-fleshed apples are more healthier than white-fleshed ones. This is because anthocyanins (the plant antioxidants that give apple flesh and skin its colour) are present in large amounts in red-fleshed apples. Have more Anti Cancer Fighting Agents.

Apples are healthy anyway (they are high in vitamins and antioxidants and are associated with reduced risk of some diseases), but it’s possible that red-fleshed apples will be even healthier. This is because they contain higher levels of anthocyanins, the compounds that make their skin and flesh red, than white-fleshed apples.
